Molino Del Ponte

Ancient Grains from Sicily

Molini del Ponte, the organic grain mill run by bread baker, pasta maker, and miller Filippo Drago and his family, is a Sicilian treasure revolutionizing the way Sicily thinks about heritage grains. We work with Molini del Ponte because they scrupulously preserve the authenticity of Sicilian grains by using state-of-the-art optical sorters, ensuring only the finest kernels make it into their flours. This results in a product that embodies the roots of Sicily's agricultural legacy.

High-quality natural flours

The ninth generation milling masters are recognized as one of Switzerland's top flour producers. Their dedication to sustainable farming and gentle milling techniques results in exceptional flours with a higher mineral content. This extra love and care taken provides our dough with a texture and flavor that we are very proud of.

Del Grillo

Brigade Siccagno Tomatoes

A Sicilian family-run business carefully harvesting summer tomatoes at peak ripeness, ensuring maximum freshness and flavor. Del Grillo’s dedication to sustainable farming practices using the Siccagno method, results in tomatoes that remind us of Sicilian summertime. We end up with a perfectly jarred pomodoro sauce that is sweet, rich, and light.

The Armatore fishing collective, located on the charming, waterfront village of Cetara on the Amalfi Coast, makes some of the world’s best anchovies. We love importing Armatore because their meticulous salt-curing and aging process intensifies the anchovies' flavor, resulting in a rich, savory taste that elevates ALBA’s pizzas.
