From sourdough starter to sourdough pizza

We love to talk about our sourdough pizza, especially in intimate settings and with time. In our hands-on workshops you’ll learn the secrets of a sourdough pizza and how to master that craft yourself. All that, while having a great time with friends – to celebrate a birthday or any other occasion – or connect with your colleaguesin a team-building workshop that surely is to everyone’s taste.

On the first Saturday of each month, we will be opening up our workshops to smaller groups, with a minimum of just 1 or 2 participants. However, please note that the minimum number of participants required for the workshop to take place is 8. We reserve the right to cancel the event if this number is not met. The upcoming workshop dates are as follows:

February 8th, March 1st, April 5th and May 3rd. You can use the same link below to book your spot for any of these workshops.

The workshop covers:

• The values of ALBA, and how we create a more sustainable food ecosystem through conscious sourcing
• How to make a pizza dough using our sourdough – expert a nerdy deep dive
• The difference between ancient and modern grains, which flour to pick for a pizza dough, and how to classify flours based on their ash content
• How to prepare and care for your sourdough starter at home
• The right techniques for kneading, shaping and baking the pizza dough

We close the workshop by sharing some delicious sourdough pizza slices, naturally. By then you’ve already met AULUS, our sourdough starter that is fueling every single pizza at ALBA. He is more than 160 years old, and you’ll get a portion of him home with you. To make sure you’ll take good care of him, we’ll include our feeding recipe, instructions and access to our WhatsApp Community, if you have questions about AULUS after the workshop.

At ALBA, we bake with ancient techniques just like hundreds of years ago. For our artisanal pizzas, we use only pure sourdough, no additives or mass-produced yeasts. That is why our very own sourdough starter AULUS is the heart of ALBA. Read more about him here.

How long does the workshop last?
The workshop lasts a total of three hours, including a two-hour theoretical part followed by a one-hour practical session.
Where are the workshops held?
All workshops take place at our Triemli location: Birmensdorferstrasse 431, 8055 Zürich.
Can we book a dinner at ALBA restaurant after the workshop?
Yes, you can enjoy a dinner at ALBA restaurant after the workshop. The 40 CHF per person option includes water, starters, pizzas, and coffee to share, available from 18:00 to 20:15 or from 20:30 to 23:00. The 60 CHF per person option includes water, starters, pizzas, dessert, coffee, and arancello to share with no time limit..
Are there any add-ons available for the workshop?
Yes, you can add an apéro for 10 CHF per person, which includes olives, parmesan, vegan spread and bread, and pickles. Prosecco and wine are available by bottle.
How much does the workshop cost?
The basic price for the workshop, including water, is 150 CHF per person for 6 participants, 120 CHF per person for 8 to 10 participants, and 100 CHF per person for more than 10 participants.
