We also import ingredients from Sicily because their flavor, quality, and production methods are unparalleled, like our olive oil and tomato passata from Del Grillo.
For ALBA’s artisanal pizzas, we use nothing but pure sourdough, fueled by our behind-the-scenes powerhouse: our starter named Aulus. He is 160 years old, and is fed every day with Tumminia ancient grain flour. Aulus relies on natural fermentation using wild yeasts and lactobacillus bacteria present in the environment. This process enhances the nutritional profile of the bread and contributes to its distinct flavor and texture.
