The Amalfi Coast’s finest anchovies

Armatore proudly practices one of the most controlled and sustainable fishing techniques in the world. This is evidenced by the short supply chain of the anchovies, which are processed within a few hours of being caught, reducing food miles and ensuring freshness is preserved. The anchovies are fished during the night using traditional fishing methods, often with small boats operated by skilled fishermen. They are immediately cleaned, gutted, and sometimes fileted. 

The cleaned anchovies are then layered with salt in barrels or containers. This salt curing process helps to preserve the fish and enhances their flavor. They are then left to age for a period of time, typically several months, and packed into jars or tins with high quality sunflower oil.
